Do you not know who this is?  This is the man that made it possible for millions of Green Bay Packer fans to be ANGRY today.  The Packers lost to the 49ers last night.  I’m taking it pretty hard.  By the way, this is Vince Lombardi, King of Football and inspirational quote maker-upper.

So what’s a girl to do when her favorite football team isn’t playing on Sunday?  Or for the rest of the season?  (Grumbling) Make ice cream and sulk in my sorrows.

And avoid watching any other football team on TV.  And not go to any Super Bowl parties that I may or may not be invited to.  And record the Super Bowl and only watch the commercials because that is the only part I care about this year.  So there.  And make another batch of this ice cream because the one I made today won’t last until the first weekend in February.  Because it’s so amazing.

Paleo Chocolate Coconut Milk Ice Cream

2 (14 oz) can Native Forest Organic Coconut Milk1/3 cup Enjoy Life Chocolate Chips2 whole pastured eggs½ tsp sea salt

1/3 cup coconut nectar or maple syrup

1 Tbsp vanilla

Heat 2 cans of coconut milk and chocolate chips over low heat and whisk until chocolate chips are melted.  Cool to room temperature.

Place coconut milk and chocolate chip mixture in a blender.  Blend for 1-2 minutes on high speed.  Add eggs, one at a time and beat well.  Add all other ingredients and blend until well combined.

Place in ice cream maker and mix until firm.

This is AWESOME soft serve, so I suggest eating the entire batch directly after you make it.   Just kidding…I put mine in a plastic container and put it in the freezer, but it froze pretty hard.  Take out about an hour before you are ready to serve.
