Cinnamon Vanilla Ice Cream & Graham Cracker Sandwiches

Ice cream sandwich

Ice cream sandwiches.  Why are all of my recipes ice cream?  Because I love ice cream, that’s why.

So, my husband says to me this weekend, “you know what would be really good?  Graham crackers”.  Which means, “Honey, you should make graham crackers”, since he knows I would never BUY graham crackers.  It bothered me from Saturday morning when he said it, and I am a pleaser, so here you are!

Cinnamon Vanilla Ice Cream

4 cans Native Forest Coconut Milk
4 pastured eggs
1 cup coconut sugar, honey or your sweetener of choice
1 tsp sea salt
3 Tbsp vanilla extract
1 1/2 tsp Saigon Cinnamon
 
Real easy.  Put in your (giant) blender and blend for 1-2 minutes.  Put in your ice cream maker and follow the directions.
 

This woman is a genius.  And her graham crackers are genius, too.

These might be the best thing I have ever made, paleo-wise.  By best thing, I mean closest to the “real” thing.  Oh, joy!  Now if I can just come up with some paleo marshmallows – Paleo S’Mores will be a go this summer (if it ever gets to be summer) at our backyard fire pit!  I’ll get working on those!

In case you didn’t know, the ice cream can be neatly spread between the graham crackers and enjoyed, or you can do like I did with mine and eat a bowl of ice cream and dip the crackers in the ice cream.  Yum!
